with cremini mushrooms, caramelized tomatoes and red wine, over creamy Hayden Mills polenta

with fresh seasonal berries and lemon curd filling

Seating for this dinner will be limited. Parties of 6 or less will be seated family-style.

Winemaker Notes
2022 Guigal Cotes du Rhone Rose
Grape Varieties: 70% Grenache, 20% Cinsault, 10% Syrah
Fermentation: The wine is handled in the same way as their far more limited Tavel rosé, which hails from the single top appellation in France for rosé. The key is a brief and perfectly timed maceration followed by a long, cool fermentation. These methods bring out the inherent quality in the grapes, emphasizing arrays of fruits, minerals and even spice notes. The warmth of the Southern Rhône climate always gives this wine an extra element of richness and fleshiness, balanced by its ripe acidity.
2021 Guigal Cotes du Rhone Blanc
Grape Varieties: 60% Viognier, 15% Roussanne, 10% Marsanne, 8% Clairette, 5% Bourboulenc, 2% Grenache Blanc
Fermentation: Low temperatures, temperature controlled alcoholic fermentation in stainless steel.
Aging: 9 months in stainless steel tanks
2020 Chateau de Nalys Chateauneuf du Pape Blanc
Variety: 40% Roussanne, 40% Grenache Blanc, 18% Clairette, 2% Picardin & Piquepoul
Fermentation: Vinification 70% in wood and 30% in stainless steel. around 4 weeks
Aging: 8 months with 70% continuing in wood (barrels, demi-muids)
2018 Guigal Chateauneuf du Pape
Grape Varieties: Composed of old-vine Grenache (70%), Mourvèdre (15%), Syrah (10%), and the remaining balance of traditional grapes of the appellation.
Fermentation: Traditional winemaking with temperature controlled alcoholic fermentation. 3 weeks maceration in tanks.
Aging: 3 years in oak foudres
Langlois Chateau Cremant de Loire Rose NV
Variety: 70% Cabernet Franc, 30% Pinot Noir
Fermentation: Treated far beyond the category standards, Langlois-Chateau operates at levels of only the very top Champange producers. Grapes are hand harbested in small bins, pressed gently and germented in stainless steel tanks.
Aging: At least 18 months on lees, with reserve wines incorporated.
